Cheesy Tilapia and Vegetables

04579btI’m not a big fan of fish, but I found this super delicious recipe that ensures I get enough fish in my diet without having to deal with that unpleasant “fishy” taste. It’s tasty fish fillets on a bed of veggies.

  • 2 tablespoons Olive oil
  • 1/3 cup Thinly sliced yellow onion
  • 1 teaspoon Dried oregano
  • 1 Medium zucchini, thinly sliced
  • 1 Medium tomato, cut into thin wedges
  • 12 ounces White fish fillets (nonoily fish such as orange roughy, tilapia, or trout)
  • 1 teaspoon Salt
  • 1/2 teaspoon Ground black pepper
  • 1/4 cup Grated mozzarella cheese
  • 1/4 cup Grated provolone cheese

Oil a skillet then add onions. Sprinkle the onions with oregano and saute for 2 minutes. Next, add the zucchini and cook for 2 more minutes. Then, add the tomato. Stir the veggies well then lay the fish fillets on top.

Sprinkle them with salt and pepper, reduce the heat down to low, cover, and let simmer for 8 minutes. Then, cover the filets with cheese. Cover the skillet once again and allow the cheese to melt. And that’s it! Serve it up and prepare to eat healthy and enjoy it, too!
